I have found an excellent Vermont-focused document describing the growing of dried beans by Winston Way of UVM. It was written in 1980 (?) and contains great hands-on advice. The document appears to be held on a server at McGill University in Quebec. Here is the link:

I first posted this on the Winooski Threasher Coop discussion 12/2008. I urge you to consider this as a product for your re-skilling series. It's great.

The first booklet in the Transition Vermont Re-Skilling Series, Richard Czaplinski's "Root Cellaring in Vermont: Why and How to Do It" is now available. Richard's booklet provides a brief introduction to some of the skills involved in learning the art of long-term food storage. By practicing these skills in both our homesteads and communities we can begin to create a more secure and sustainable food system, and have a lot of fun in the process.

There are three ways to view this document:

1) Read online: The pages in this version are in sequential version so that they can be read online. 1_Root Cellaring_R Czaplinski_2009_WEB.pdf

2) Print it yourself: This version is meant to be printed. The pages are out of order, but when printed (double-sided, binding location- short edge) the booklet will appear in sequential order. 1_Root Cellaring_R Czaplinski_2009_PRINT.pdf

3) Printed, color copies will be available shortly. Locations will be posted here.

Next up in the series is Mark Krawczyk's "Putting Your Lawn to Work".
