This session will focus on Richard’s 30-year experience with the root cellar he built into the basement of his small active and passive solar house in 1978. How it was constructed and how he manages it keeping three key variables in mind. The results: root vegetables (carrots, beets, turnips, potatoes) and onions and garlic that keep until the new crops come in the following year. The routine with apples, leeks and cabbage will also be discussed. In addition, he will describe how an attached, unheated greenhouse, when used in conjunction with the root cellar, can increase the length of storage as well as the freshness of vegetables.
